Entrecote al Queso Cabrales
From the Manassas Gourmet Club Night of Discovery Dinner celebrating Columbus Day. 4 servings. Note: some ingredients and their amounts were missing
Ingredients
  • 8oz Blue Cheese, crumbled
  • 1 Glove Garlic, chopped fine
  • 1Dash Ground Red Pepper
  • 4 sm New York or Strip Steaks, 1" thick - about 2 lbs
  • Freshly Ground Pepper
  • 1/4C Water
  • Snipped Parsley
  • Wine
  • Margarine
Instructions
  1. Cook and stir cheese, garlic, wine and red pepper over low heat stirring frequently, until cheese is melted. Keep warm
  2. Heat margarine in 12" skillet until hot,
  3. Cook beef steaks over med-high heat, turning once, until medium doneness - about 5 min on each side.
  4. Sprinkle with pepper
  5. Remove from skillet and keep warm
  6. Add water to skillet
  7. Heat to boiling, stirring constantly to loosen brown bits, boil 2 minutes.
  8. Stir juices from skillet into cheese mixture
  9. Pour over steaks
  10. Sprinkle with parsley
