Cracked Pepper Bread
From the Manassas Gourmet Club Dinner "Oktober Fest" Yield 2 Loaves
Ingredients
  • 4 1/4C Flour
  • 2Tbsp Sugar
  • 3/4tsp Salt
  • 2tsp Coarsely Ground Pepper
  • 1pkg Dry Yeast
  • 1 1/2C Milk
  • 2Tbsp Butter or Margarine
  • 1 Egg
  • 1 Egg yolk, beaten
Instructions
  1. Combine 2 cups of flour, sugar, salt, pepper and yeast in a large mixing bowl
  2. Combine milk and butter in saucepan, heat until butter melts
  3. Cool milk mixture to between 120 - 130 degrees
  4. Gradually add milk mixture to flour mixture, beating at high speed
  5. Gradually add remaining flour to make a soft dough
  6. Turn dough onto floured board and knead until smooth and elastic
  7. Put in a well greased bowl, turning once to grease top
  8. Cover and let rise until double - about 1 hour
  9. Punch dough down, let rest ten minutes
  10. Divide dough in half and shape each into a round slightly flat loaf.
  11. Place loaves on a slightly greased baking sheet
  12. Brush with egg yolk
  13. Make several diagonal slits in each loaf using a sharp knife
  14. Cover and let rise until doubled (1 hour)
  15. Bake at 375 for 15 - 20 minutes ir when loaves sound hollow when tapped.
  16. Cool on wire racks
