Chicken Tostadas
From the Manassas Gourmet Club Dinner "South of the Border" Serve with Avocado Dressing. Serves 6
Ingredients
  • 1 Clove Garlic, minced
  • 2Tbsp Vegetable Oil
  • 3C Shredded Cooked Chicken Breast
  • 14 oz can Diced Chillies, drained
  • 1/2C Sour Cream
  • 1 3/4C Vegetable Oil
  • 6 6" Flour Tortillas
  • 1/2 Small Head Iceberg Lettuce, sliced thin
  • 1C Shredded Cheddar Cheese (4 oz)
  • 2 Tomatoes, chopped
  • Avocado Dressing
Instructions
  1. Saute garlic in 2 T oil in a saucepan until tender.
  2. Stir in chicken, chilies and sour cream
  3. Cook over medium heat, then remove from heat and keep warm
  4. Heat 1 3/4 C oil in 10" skillet.
  5. Fry tortillas one at a time, 30 seconds per side until lightly browned
  6. Drain on paper towels
  7. Arrange lettuce on each tortilla
  8. Top with chicken mixture
  9. Sprinkle with cheese and tomato
  10. Top with Avocado Dressing
