Broccoli Almandine
From the Victorian Christmas Dinner of the Manassas Gourmet Club Makes 4 - 6 servings
Ingredients
  • 1bunch Broccoli
  • 1 1/4C Boiling Water
  • 6Tbsp Butter
  • 1/3C Slivered Blanched Almonds
  • 1Tbsp Lemon Juice
  • 1/2tsp Salt
  • 1/8tsp Pepper
Instructions
  1. Wash broccoli under cold water
  2. Cut into equal size pieces leaving 1" stem
  3. Arrange broccoli alternating heads and stems one layer deep in large heavy skillet.
  4. Add water and salt
  5. Cover and simmer 12 - 15 minutes until crisp-tender.
  6. Drain, put in serving dish and keep warm.
  7. Melt butter in pan over medium heat
  8. Add almonds and sauté stirring for 3 - 5 minutes until golden brown
  9. Add lemon juice and pepper
  10. Pour over broccoli
