Asparagus with Lemon Butter
Ingredients
  • 2lbs Fresh Asparagus
  • 1/4C Butter or Margarine
  • 1/2tsp Salt
  • 1/2tsp Fresh Ground Pepper
  • 1Tbsp Grated Lemon Rind
  • 1/4C Fresh Lemon Juice
  • Lemon Rind Strips for Garnish
Instructions
  1. Snap off tough ends of asparagus
  2. Remove scales with peeler (if desired)
  3. Melt butter in skillet
  4. Add asparagus
  5. Sauté for 3 minutes or until crisp-tender
  6. Add salt and pepper and remove from heat
  7. Toss with lemon rind and juice
  8. Garnish
